DAHL (for some reason the children love this)

Yellow lentils (organic everything of course)

Fresh grated ginger


Coconut Milk

Soak lentils overnight in water with a splash of apple cider vinegar.

Next morning drain and cook covered well with water and 1 tsp salt, around 1 tablespoon of freshly grated ginger and 1 tablespoon turmeric.  After bringing to a boil, simmer until very soft.

The children seem to love this best when I blend it with a hand-blender, then add a can of organic coconut milk at the end.

We have added several chopped carrots to cook along with the lentils, which the children also love.

Serve with brown rice, (soaked overnight with a splash of apple cider vinegar and a good teaspoon of salt.  A bit of coconut oil in the bottom is yum too.

We usually have steamed broccoli too.
